Smoked and cured foods evening class 5.30 p.m -7.30 p.m.

Curing has long been used to preserve and bring out the flavours inherent in foods.
Adding the aromatics from smouldering wood smoke to build layers of flavor, teamed with fresh baked sourdough bread, such simple ideas and techniques that have worked for generations.
We bring together these straight forward ideas within an accessible and comfortable environment, to make an enjoyable experience.

Our smoked and cured food classes are an informal evening theory session, with a look into brining, dry curing and hot and cold smoking.
We cover smoking fruits, vegetables, dry goods, fish and meat, which wood to use, and how to get the best flavour from the smoking process.

Smoked and cured food course is £30 per person.
