Bread Day 1
We cover making and working the dough.
How to build structure in to a loaf. Traditional and modern baking methods.
We all get involved with 3 doughs:
• White bread for fougasse, baguette, loaves and epi.
•Italian olive oil dough for focaccia, ciabatta, and picnic bread.• Pain de campagne, a french country bread with rye and malted flour!
• Also an introduction to sourdough.
The cost is £100.
This includes notes, all equipment, lunch and a bag of your finished bread to take home.
All Cookery Courses
Cookery courses are a natural extension of our love for food, a chance to slow down and enjoy creating food from simple ingredients. Also the pleasure it brings to a shared table of family and friends.
If you are interested to learn a little more about traditional and contemporary cooking methods, why not join us for a day or an evening course.
All of our courses are designed to cater for all ability levels.
A thorough look at bread making, covering 3 types of dough from white bread, Italian, French and Sourdough.
Smoking & Curing
Our smoked and cured food classes are an informal evening theory session, with a look into brining, dry curing and hot and cold smoking.
Cookery Skills & Tapas
We cover sauces, tapas, food for entertaining, efficient cooking methods, preserving, knife skills and more.

Dowell street car park is a two minute walk from The Holt, or you can enter the lottery of the high street parking which is an hour. We always keep an eye out for high visibility jackets!
